In 1971 with the Kaapse Vonkel, Frans Malan - founder of the Simonsig wine estate - was the first producer of Méthode Cap Classique in South Africa.

Born from the encounter of Pinot Noir and Pinotage, Méthode Cap Classique Kaapse Vonkel Brut Rosé offers truly surprising sensations. With bright salmon color, this Classic Method on the nose offers hints of fresh raspberries e blueberries. On the palate aromas of white peach, strawberry sorbet e fragrant biscuits.

The natural acidity contributes to the freshness and pleasant persistence of this Méthode Cap Classique Rosè. Delicate bubbles.

Pair with: Excellent on its own, it goes perfectly with all seafood dishes, red fruit salads or any light dessert.

In the vineyard

The 2018 vintage was very demanding and stimulating due to the prolonged drought, perhaps the worst in the last 100 years, accompanied by the restrictions on water use imposed by local authorities. The skills and experience of the vineyard and winery team allowed Simonsig to cope with hot and dry weather conditions. In the vineyard and in the cellar, Simonsig has adapted his procedures to minimize the effect of the lack of water. However, the dry climate during the season had some advantages: the vines were healthy, with smaller grapes but with great intensity. The harvest took place in blocks, following the different levels of ripeness, obtaining perfect grapes for winemaking.

In the cellar

The grapes are harvested by hand and the whole bunches are delicately pressed in pneumatic presses to collect the purest juices called cuvée. After two days the must is left to ferment in stainless steel tanks at about 14-16 ° C, with specially selected yeasts.
