In 1971 Frans Malan - founder of the Simonsig wine estate - was the first producer of Méthode Cap Classique in South Africa (sparkling wine, classic methode).

 

Elegant Méthode Cap Classique with light golden shades. On the nose aromas of fresh apple, white peach e citrus flowers. On the palate refined and complex hints of lemon and raspberry. The pleasant acidity contributes in an extraordinary way to the fine finish of this Méthode Cap Classique from South Africa, which makes any occasion memorable.

Pair with: The versatile Kaapse Vonkel can be tasted on any occasion, with scrambled eggs in the morning, sushi for lunch, duck for dinner and almond cake for dessert. Great matching with fresh oysters and pâtè. Perfect to taste with no pairing as well.

In the vineyard

Abundant rainfall during the final months of 2019 led to better water availability for the vineyards. The budding of the vines was early; however, the wind conditions during flowering and the rain during the month of December required meticulous management of the vineyard. Subsequently, moderate temperatures and dry weather led to an excellent season for white wines. The production was above average with healthy grapes of excellent quality. An intense season with great potential, which required concentration and skill from the Simonsig team.

In the cellar

The bunches are hand-picked and pressed; a part of the must remains to macerate on the skins for the whole night. The must is then inoculated with selected yeasts, chosen for the production of fruity wines. The fermentation temperature is kept between 12 ° C and 14 ° C, in order to ensure a slow process capable of producing the best fruit flavor.
